I am thinking about popping upto Man airport viewing park and staying
overnight B4 coming back the next day.

Are their any general grocery/food shops local to the airport? Or is a trip
to Piccadilly the best bet?

The viewing park is not at the airport terminal area but is over to the West
of the airport (rather a long walk away - about one and a half miles) and
has open air car parking (the admission charges vary depending on number of
occupants). Have a look on Google Earth for Concorde as it is in the viewing
park.

Piccadilly is about nine miles north of the airport (reachable by train).

The viewing park has a hot food facility (a sort of glorified portacabin but
not eat-in) which has a good variety and there is a spotters shop selling
magazines models etc., at the viewing park.

The Airport terminal has a railway station if you need to get to Piccadilly
without using a car or taxi. It has nearly all the food facilities you could
ask for but not a grocery shop as such and is likely to be expensive.

About two miles away is Heald Green which is a bustling village with a good
selection of shops and also reachable by train (one stop).

Heald Green also has a Travel Lodge/Travel Inn type hotel (not sure which)
if you need one.
